We have on hand:

One box of green tomatoes (maybe 5 or 6 pounds?)
One HUGE head of fresh farmer's market broccoli
~Two pounds of red potatoes
~Two pounds of farmer's market red and green bell peppers
~One pound of farmer's market large hot peppers (currently in the process of roasting & freezing some of them)
~ 1 pound of small white onions
One bunch of scallions
One medium-sized zucchini

Some sour cream, lots of eggs, some milk, kielbasa, chicken garlic sausage, and plenty of frozen cubed and shredded zucchini.

What the hell should I cook?! Preferably something that uses up LOTS of the broccoli, peppers and/or green tomatoes.

Also, if you have suggestions of recipe websites, I'm all ears! I can't seem to find one that's diverse enough to satisfy my recipe needs in one go.

Veggie stew or kielbasa and veggie stew. The potatos and tomatoes makes a nice base.

Its actually looking quite likely that I have celiac, and will be going gluten-free soonish.

Gratin!

I just love making homemade gratins, making a simple bechemel (roux plus milk), drizzling it over cooked veggies, adding some cheese, and then baking for a warm wintery soothing treat, that actually is not terribble for you (if packed with veg).

Soups...you could probbaly even throw the potatoes, peppers and broccoli into one soup.

Curry with the veggies.

We used to have kielbasa with granny smith apples...and I've liked it with green, so Kielbasa and broccoli with something tart (maybe the green tomamtos).

Just chop it all up, throw in some spices, and put it all in a wok or other veggie-making thing. Wok the hell out of it, then add the chicken garlic sausage--- mmmmmmmmmmmmmmmmmm.

For the roasted chilies and eggs I recommend making Rellenos! I like the fluffy omelet kind. I usually stuff them with cheese but you could certainly cook up some garlic sausage or kielbasa with some peppers and onions and stuff that into the roasted (peeled) peppers. Then take an egg for every two peppers you have stuffed and separate them. Beat the egg whites until fluffy and mix a Tbsp of flour for each yolk into the yolks. Then gently fold the flour-yolk mixture into the beaten egg whites. Put some oil in a frying pan and then lay in a layer of the egg mixture. Place the pepper in the egg and then cover with more egg. Flip them over and then flip again onto an edge so that they come out looking kind of boxy. Mmmmmm.

For the potatoes, broccoli, onions zuchini and peppers why not make some nice potato chowder. Saute onions and peppers add stock and chunked potatoes and cook until soft. Near the end add zuchini and broccoli and milk and cook until just right. A nice fall stew with some fresh bread does wonders for the soul.

LOL!! You make me sound like the MacGyver of food.

Let's see ... green tomatoes? Fried green tomatoes, of course. (Damn, that's a lot of tomatoes.) You could pickle a few.

Broccoli - chop up, blanch, toss with a mix of fresh chopped garlic, salt, & olive oil. Simple tasty broccoli salad - served in Italy.

Stir fry veggies.

Potato salad, mashed potatoes, potato soup, hash browns with kielbasa ...

Stuffed peppers. Roasted bell peppers - roast 'em, puree them, and make pepper pesto for pasta. It would freeze well.

Onions last a while in the veggie drawer so use them as needed.

Scallions - grill 'em with a brush of oil, a sprinkle of S&P, and a squeeze of lime.

Zucchini - grill. Or make a frittata. Or zucchini bread. (Good way to use the eggs.)

Freeze the meats.

Let's see... the chicken garlic sausage and sweet peppers are screaming sausage sandwich to me. I know it's really simple, but fry the peppers up with some onion and throw it on a long roll with the sausage... mmmm, delicious.

Otherwise, I'm going to echo other people's suggestions with a breakfast. A simple salsa verde made from green tomatoes and hot peppers and onions, sour cream on the side, accompanying an omelette with a touch of milk, some zucchini and kielbasa cubes in it sounds like just the trick. Oh man, now you've got me hungry.

One of my favorite veggie recipes is a vegetable skillet casserole:

A few roasted peppers, thinly sliced
1 tblsp oil
1 1b potatoes (fingerling or whatever), thinly sliced
1 large onion, thinly sliced
1 large zuccini, sliced
1 large yellow squash, sliced
cherry tomatoes, sliced in half
chopped garlic
chopped basil
salt
pepper

Heat oil, add and toss potatoes. Cook for a couple of minutes. Add onion, squashes (or whatever combo of veggies that suits you), basil, garlic, and s+p in layers. Add peppers then add tomatoes (I am sure you can put any kind of toms here) and sprinkle with more of the basil, garlic and s+p. Add about 3 tbsp water and simmer for 25 minutes.

This dish is so easy and so simple yet it tastes divine. Fresh veggies make it awesome!
