Copenhagen: beautiful city, easy to get around, find a tourist map and go to what looks cool...
Further afield: We enjoyed a side trip to Mons Klint (like the chalk cliffs of Dover) but might be a bit out of the way.
It's an easy drive from Denmark to Sweden... what we have seen of Sweden (in February) was lovely. We may be vacationing there next week.
I loved Finland. Helsinki is another beautiful city... and if you want something a bit more frisky, take the ferry to Tallinn, Estonia. It's a party-hard, ex-communist, look-the-other-way, kinda place... and old/lovely too.
We rented a cabin in Finland. Definitely worth it if you have someone special along. There are thousands of lakes in Finland (and to a lesser degree Sweden) and it's pretty easy to rent a cabin with a lake all to yourself. http://www.flickr.com/photos/denovich/996639483/ This is by far the most relaxing thing I've ever done. 23hrs of daylight, no other human within 2-3km, a lake + sauna + cabin all to ourselves... *sigh*
Sadly, all my contacts are of the business variety. Great people... but unless you want to talk warehouse logistics/voice recognition, I'm not sure I can swing crash space for you.
