One of my favorite veggie recipes is a vegetable skillet casserole:

A few roasted peppers, thinly sliced
1 tblsp oil
1 1b potatoes (fingerling or whatever), thinly sliced
1 large onion, thinly sliced
1 large zuccini, sliced
1 large yellow squash, sliced
cherry tomatoes, sliced in half
chopped garlic
chopped basil
salt
pepper

Heat oil, add and toss potatoes. Cook for a couple of minutes. Add onion, squashes (or whatever combo of veggies that suits you), basil, garlic, and s+p in layers. Add peppers then add tomatoes (I am sure you can put any kind of toms here) and sprinkle with more of the basil, garlic and s+p. Add about 3 tbsp water and simmer for 25 minutes.

This dish is so easy and so simple yet it tastes divine. Fresh veggies make it awesome!
